About the kitchen

We have the author's concept of cuisine. In terms of approach to food, we always try to interpret everything in our own way.

The menu reflects gastronomic traditions of Slavic, French, Italian, Asian cuisine, rethought and adapted to the national mentality.

In most dishes we use local ingredients, selecting the perfect cut from the world gastronomic heritage. We are sure that it’s possible to create our own unique culture on the product that is in Belarus.

For cooking, we use modern culinary technologies: from sous-view and confi method to high-tech molecular cuisine. 

The original author's menu impresses even the most spoiled gourmets with its amazingly creative serving of dishes and so unusual combination of tastes.

All efforts of our team are aimed at developing our own tastes and tastes of our guests. That is why we introduce our audience to the world of food and completely different approaches to it.

How do dishes get on our menu?

At the Park Hotel "Lesnaya Gavan", the chef works on creating the menu twice a year - during the summer and winter seasons. Thus, guests do not get bored and are always able to try and appreciate something completely new.

To offer a completely new menu every six months is a definite challenge. A new menu is planned in advance for several weeks, if not months. For example, if in May we launch the summer menu, then our chef in March selects products, conducts tastings, trains cooks and waiters.

Some positions are found in both menus, but, as a rule, these are two completely different stories, but with a common idea - our menu should be 100% hits playlist.

Careful attention to the guests often gives hints for the menu. If guests ask a question why we don’t have this or that dish, our chef takes a note of it.

Entering a new menu, we focus on seasonality, concept, optimization, modern technology and food processing. 

We approve dishes at the internal tastings. At the table we come together with our employees and exchange impressions. Next, we launch the dish and some time we survey the views and opinions of our guests. Then we decide: it goes further with us or not.
